Lina’s love for food and passion in cooking has led her to the world renowned Le Cordon Bleu London, where she graduated with Diploma in Cuisine. She thrives on inventing and experimenting, injecting creativity and innovation into the dishes she creates. Specialising in Asian Fusion cuisine, she will be presenting a menu inspired by the Basque Cuisine, an ancient and unique culture in northern Spain, recreating some of her favourites during her time in San Sebastian.

Padrón Pepper with Sea Salt
A specialty from northwestern Spain, the saltiness and mild spice of the Padrón pepper makes for an addictive opening dish to stimulate the appetite in preparation for the feast ahead.
Spanish Potato Omelette
A Spanish classic, potatoes, onions and a variety of spices and added to beaten eggs, forming a savoury and luscious omelette, completed with the peppery rocket salad to give it a minty kick.
Creamy Goat Cheese Risotto with Sunflower Seed
The indulgent goat cheese and high grade grains are combined and timed perfectly to give the dish its rich flavour and creamy texture, uniquely topped with sunflower seeds to add an extra fragrance and nuttiness
Spanish Stew Beef Cheek with Cauliflower Puree
One of the best meat cuts, the beef cheek is uniquely lean and tender, browned and slow cooked to bring out the intense flavour, stewed in a specially-created rich stimulating cauliflower puree
Basque Burnt Cheesecake
Defying all conventional rules, this cheesecake has an appearance of being simultaneously burnt yet under-cooked, the blackened yet addictive caramel top perfectly complementary to the gooey and creamy centre, one of the most unique desserts in the world, originating from this unique culture.
