Melvin and Kai both had humble starts in their culinary journey, with Melvin starting up as a commis cook in the Conrad Hotel, and Kai in a Japanese kitchen. Over the years, they have both accumulated skills and knowledge in a wide range of cuisines, including Modern European, Spanish, Tapas, South American, Italian, and even local hawker style concepts. With this broad range of expertise, they are the perfect hosts to present this Singapore fusion style menu, working under the belief of endless possibilities to create outstanding menus for guests.
Chawanmushi with Preserved Radish
Grilled Prawn and Hei Mee (Prawn Noodles) Jelly, served with Asparagus
Seared Grain Fed Sirloin and Green Sambal sauce, served with Roasted Butternut Pumpkin and Local Style Bok Choy
Pandan Panna Cotta with Smoked Red Bean
